This Waldorf salad is a classic for a reason—it's creamy, crunchy, and full of flavor. Our version uses wolfish, a sustainable and delicious fish that has a mild flavor that pairs well with the other ingredients. The wolfish is cooked in the air fryer until it's golden brown and cooked through, and then tossed with mayonnaise, walnuts, celery, apple, lemon juice, salt, and pepper. The result is a salad that's both light and satisfying, and perfect for a summer lunch or dinner.
The Waldorf salad was created in 1893 by Oscar Tschirky, the maître d'hôtel of the Waldorf-Astoria Hotel in New York City. It was originally made with apples, celery, walnuts, and mayonnaise, and was served on a bed of lettuce. Over the years, the Waldorf salad has been adapted and updated, with different ingredients being added and removed. Our version uses wolfish, a sustainable and delicious fish that has a mild flavor that pairs well with the other ingredients. We also cook the wolfish in the air fryer, which gives it a crispy exterior and a tender interior.
