Feisty Fennec Frittata

Ingredients
- 6 large eggs
- 1/2 cup almond milk
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped spinach
- 1/4 cup shredded paleo-friendly cheese
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
Instructions
- Preheat air fryer to 350°F (175°C).
- In a large bowl, whisk together the eggs, almond milk, onion, bell pepper, spinach, cheese, chili powder, and cumin.
- Pour the egg mixture into a lightly greased 8-inch air fryer-safe dish.
- Cook for 12-15 minutes, or until the frittata is set and cooked through.
- Let cool for a few minutes before slicing and serving.
