Cauliflower and Spinach Salad with Tahini Dressing

Ingredients
1 head of cauliflower, cut into florets
1 bunch of spinach, washed and chopped
1/2 cup of chopped red onion
1/2 cup of chopped parsley
1/2 cup of chopped walnuts
1/4 cup of tahini
1/4 cup of lemon juice
1/4 cup of olive oil
1 teaspoon of ground cumin
Salt and pepper to taste
Instructions
In a large bowl, combine the cauliflower, spinach, red onion, parsley, and walnuts.
In a separate bowl, whisk together the tahini, lemon juice, olive oil, cumin, salt, and pepper.
Pour the dressing over the salad and toss to coat.
Serve immediately.
