Ingredients
  • 1 cup farro
  • 1 cup Brussels sprouts, trimmed and halved
  • 1/2 cup pomegranate seeds

  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with olive oil, salt, and pepper.
  3. Spread Brussels sprouts on a baking sheet and roast for 20-25 minutes, or until tender and browned.
  4. While Brussels sprouts are roasting, cook farro according to package directions.
  5. In a large bowl, combine farro, roasted Brussels sprouts, pomegranate seeds, red onion, and parsley.
  6. Drizzle with balsamic vinegar and olive oil.
  7. Season with salt and pepper to taste.
  8. Serve warm or at room temperature.
