Ingredients

  • 1/2 cup chopped fresh thyme
  • 1/4 cup extra-virgin olive oil
Instructions
  1. Combine the quinoa, lentils, and vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer until the quinoa and lentils are tender and the liquid has been absorbed, about 20 minutes.
  2. Fluff the quinoa and lentils with a fork and transfer to a large bowl.
  3. Add the red onion, bell pepper, parsley, thyme, olive oil, lemon juice, salt, and pepper to the bowl and toss to combine.
  4. Serve immediately or refrigerate for later.
