Roasted Vegetable and Feta Towers
These towers of roasted vegetables and feta are a colorful and flavorful appetizer or side dish. The vegetables are tender and slightly caramelized, and the feta adds a salty, tangy flavor. The towers are easy to assemble and can be made ahead of time.

Ingredients
  • 1 zucchini, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 yellow bell pepper, cut into 1-inch cubes
  • 1 onion, cut into 1-inch cubes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Toss the vegetables with the olive oil, oregano, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender.
  4. Remove from the oven and let cool slightly.
  5. Thread the vegetables onto skewers, alternating with feta cheese.
  6. Serve immediately.
