Ingredients
  • 6 medium-sized red bell peppers, halved and seeded
  • 3 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • ½ teaspoon of smoked paprika
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • ¼ cup of chopped fresh parsley
Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Place the red bell pepper halves on a baking sheet lined with parchment paper.
  3. Drizzle the olive oil over the peppers and season with oregano, paprika, salt, and pepper.
  4. Roast the peppers for 20-25 minutes, or until they are tender and slightly charred.
  5. Remove the peppers from the oven and let them cool slightly.
  6. Once cooled, peel the peppers and cut them into strips.
  7. In a large bowl, combine the roasted red pepper strips, garlic, and parsley.
  8. Toss to combine and serve warm or at room temperature.
