Ingredients
6 medium-sized red bell peppers, halved and seeded
3 tablespoons of olive oil
1 teaspoon of dried oregano
½ teaspoon of smoked paprika
Salt and pepper to taste
2 cloves of garlic, minced
¼ cup of chopped fresh parsley
Instructions
Preheat your oven to 400°F (200°C).
Place the red bell pepper halves on a baking sheet lined with parchment paper.
Drizzle the olive oil over the peppers and season with oregano, paprika, salt, and pepper.
Roast the peppers for 20-25 minutes, or until they are tender and slightly charred.
Remove the peppers from the oven and let them cool slightly.
Once cooled, peel the peppers and cut them into strips.
In a large bowl, combine the roasted red pepper strips, garlic, and parsley.
Toss to combine and serve warm or at room temperature.
