Ingredients
1 lb farfalle pasta
1 Tbsp olive oil
2 shallots, thinly sliced
2 cloves garlic, minced
1 lb cremini mushrooms, sliced
2 Tbsp fresh thyme leaves, divided
1 cup vegetable broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil. Cook the farfalle according to the package directions.
