Ingredients
  • 1 lb farfalle pasta
  • 1 Tbsp olive oil
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 1 lb cremini mushrooms, sliced
  • 2 Tbsp fresh thyme leaves, divided
  • 1 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Bring a large pot of salted water to a boil. Cook the farfalle according to the package directions.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat.
  3. Add the shallots and cook until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute more.
  5. Add the mushrooms and cook until they are softened and browned, about 10 minutes.
  6. Stir in the vegetable broth and 1 Tbsp of the thyme leaves.
  7. Bring to a simmer and cook until the liquid is reduced by half, about 5 minutes.
  8. Drain the farfalle and add it to the skillet with the mushroom mixture.
  9. Toss to combine and cook until the pasta is heated through, about 2 minutes.
  10. Stir in the Parmesan cheese and the remaining 1 Tbsp of thyme leaves.
  11. Season with salt and pepper to taste.
