Roasted Cherry Tomato and Arugula Rigatoni

I first came up with this recipe when I was trying to use up some leftover cherry tomatoes. I had no idea what to make with them, so I just threw them in a bowl with some olive oil, salt, and pepper and roasted them in the oven. While they were roasting, I cooked some pasta and then tossed everything together with some arugula, Parmesan cheese, and red onion. Ingredients
  • 1 pound rigatoni pasta
  • 1 pint cherry tomatoes, halved
  • 1/2 cup olive oil
  • 1/4 cup chopped fresh thyme
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped red onion
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a large bowl combine cherry tomatoes, olive oil, salt, pepper, thyme and basil. Toss to coat.
  3. Spread tomatoes on a baking sheet and roast for 15-20 minutes, or until softened and lightly browned.
  4. While tomatoes are roasting, cook pasta according to package directions.
  5. Drain pasta and add to a large serving bowl.
  6. Add roasted tomatoes, Parmesan cheese, and red onion to the bowl and toss to combine.
  7. Serve immediately, garnished with additional Parmesan cheese and basil if desired.
