Ingredients
  • 1 cup uncooked couscous
  • 2 cups boiling water or vegetable broth
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh mint
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
Instructions
  1. In a medium bowl, combine the couscous and boiling water or broth.
  2. Cover and let stand for 5 minutes, or until the couscous is cooked through.
  3. Fluff the couscous with a fork and transfer to a large bowl.
  4. Add the olive oil, lemon juice, mint, garbanzo beans, feta cheese, salt and pepper to the couscous and stir to combine.
  5. Serve immediately or chill for later.
