Ingredients
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 clove garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 cup pitted olives, sliced
  • 4 large eggs
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
Instructions
  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in spinach and olives and cook until spinach is wilted, about 2 minutes.
  5. Crack eggs into the skillet and cook to desired doneness, breaking up with a spatula as they cook.
  6. Season with oregano, salt, and pepper.
