Slow-Cooker Japanese Teriyaki Salmon with Ginger Rice
This slow-cooker Japanese teriyaki salmon with ginger rice is an easy and delicious weeknight meal. The salmon is cooked in a flavorful teriyaki sauce made with soy sauce, mirin, sake, brown sugar, honey, ginger, and garlic. This recipe was inspired by a trip to Japan that I took a few years ago. I was lucky enough to eat some of the most amazing salmon I've ever had while I was there. The salmon was cooked in a simple teriyaki sauce and served with rice. I was so impressed with the flavor of the salmon that I knew I had to recreate it at home. I experimented with different recipes and ingredients until I came up with this one. It's not quite as good as the salmon I had in Japan, but it's pretty darn close. And it's so easy to make, which is always a plus.

Ingredients
1 pound salmon fillet, skin-on
1/2 cup soy sauce
1/4 cup mirin
1/4 cup sake
3 tablespoons brown sugar
2 tablespoons honey
1 tablespoon grated fresh ginger
1 clove garlic, minced
Instructions
Whisk together the soy sauce, mirin, sake, brown sugar, honey, ginger, and garlic in a small bowl.
Place the salmon fillet in a slow cooker and pour the teriyaki sauce over it.
Cook on low for 6-8 hours, or until the salmon is cooked through.
While the salmon is cooking, make the ginger rice. In a medium saucepan, combine 1 cup of white rice, 2 cups of water, and 1 tablespoon of grated fresh ginger.
Bring to a boil, then reduce heat to low and simmer for 18 minutes.
Remove from heat and let stand for 5 minutes before fluffing with a fork.
Serve the salmon with the ginger rice and your favorite vegetables.
