Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1 (13 ounce) can of unsweetened coconut milk
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic, ginger, turmeric, cumin, and red pepper flakes and cook for 1 minute more.
  4. Stir in the coconut milk and bring to a simmer.
  5. Transfer the mixture to the slow-cooker.
  6. Add the chicken and cook on low for 6-8 hours, or until the chicken is cooked through.
  7. Serve the curry over jasmine rice.
