Ingredients
  • 1 whole-wheat tortilla
  • 1/2 cup cooked black beans
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup shredded cheddar cheese
  • 2 eggs
  • Salt and pepper to taste
  • Salsa for serving
Instructions
  1. Heat a large skillet over medium heat.
  2. Crack the eggs into the skillet and cook until cooked to your desired doneness.
  3. Warm the tortilla in the skillet or in the microwave.
  4. Place the eggs, beans, onion, bell pepper, and cheese in the center of the tortilla.
  5. Season with salt and pepper to taste.
  6. Fold the bottom of the tortilla over the filling.
  7. Fold in the sides of the tortilla.
  8. Roll the tortilla up tightly.
