Feta and Olive Omelet

Ingredients
  • 2 eggs
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped black olives
  • 1/4 cup chopped feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Heat the olive oil in a medium-sized nonstick skillet over medium heat.
  2. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the black olives and feta cheese and cook for another 2 minutes
  4. Add the eggs crack
  5. Reduce heat to medium-low and cook until eggs are cooked to your liking
  6. Season with salt and pepper to taste and serve immediately.
