Ingredients
  • 1 cup (120g) vegan butter, cold and cubed
  • 1/2 cup (100g) tahini
  • 1/2 cup (120g) chopped dates
  • 1/4 cup (30g) granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups (180g) gluten-free flour
  • 1/4 cup (60ml) cold water
  • 1 tablespoon lemon juice
Instructions
  1. In a large bowl, cream together the butter and tahini until light and fluffy.
  2. Add the dates, sugar, cinnamon, and nutmeg and mix until well combined.
  3. In a separate bowl, whisk together the flour, water, and lemon juice.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. On a lightly floured surface, roll out the dough to a 12-inch (30cm) circle.
  7. Spread the date filling evenly over the dough.
  8. Roll up the dough from the outside in, starting from one side and working your way around to the other side.
  9. Cut the roll into 12 slices and place them on a baking sheet lined with parchment paper.
  10. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.
