Ingredients
  • 1 sheet puff pastry, thawed
  • 4 tablespoons apricot preserves
  • 5 ripe figs, sliced into thin rounds
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon ground cinnamon
  • 1 egg beaten with 1 tablespoon water
  • 2 tablespoons maple syrup
  • 1 teaspoon chopped fresh thyme
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Unfold puff pastry on a lightly floured surface and roll out to 12x18 inch rectangle. Spread with apricot preserves and sprinkle with walnuts, cinnamon, figs and thyme.
  3. Roll the dough from one of the long ends to meet the other and cut crosswise into 12 triangles.
  4. Place croissants on baking sheet and brush with egg wash.
  5. Bake in preheated oven for 12-18 minutes or until golden brown.
  6. Whisk together maple syrup and thyme. Drizzle over warm croissants and serve.
