1 cup (2 sticks) cold, cubed vegan butter
2 cups (240g) all-purpose gluten-free flour
1/2 teaspoon fine sea salt
1/4 cup (60ml) ice water
4 cups (24 ounces) peeled, sliced peaches
1 cup (6 ounces) fresh raspberries
1/4 cup granulated sugar
1 tablespoon cornstarch
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the cubed butter, flour, and salt. Work the ingredients together until a dough forms.
Add the ice water, one tablespoon at a time, and mix until the dough holds together. Avoid overworking the dough.
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
On a lightly floured surface, roll out the dough into a 12-inch (30cm) circle.
Preheat oven to 375°F (190°C).
Combine the peaches, raspberries, sugar, and cornstarch in a bowl. Transfer the filling to the center of the dough, leaving a 2-inch (5cm) border.
