Ingredients
  • 1 cup dried black beans
  • 1 sweet potato, peeled and cubed
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Rinse the black beans and soak them in water for at least 4 hours.
  2. Drain the black beans and rinse them again.
  3. Add the black beans, sweet potato, onion, green bell pepper, red bell pepper, chili powder, cumin, salt, and black pepper to a large pot.
  4. Cover the pot with water and bring to a boil.
  5. Reduce the heat to low and simmer for 1 hour, or until the beans are tender.
  6. While the beans are cooking, make the cilantro sauce.
  7. To make the cilantro sauce, combine the cilantro, parsley, garlic, lemon juice, olive oil, and salt in a food processor.
  8. Process until smooth.
