Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 serrano pepper, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with 2 tablespoons of oil, the chili powder, cumin and paprika. Season with salt and pepper, and spread on a baking sheet.
  3. Roast in preheated oven until tender and slightly browned, about 20 minutes.
  4. Meanwhile, heat remaining 2 tablespoons of oil in a large skillet over medium heat.
  5. Add the onion, bell pepper and serrano pepper to the skillet and cook until softened, about 5 minutes.
  6. Stir in the black beans and cook until heated through, about 2 minutes.
  7. Add the roasted sweet potatoes to the skillet and stir to combine.
  8. Season with additional salt and pepper to taste.
  9. Serve the filling in tortillas with your favorite toppings.
