Ingredients
  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth
  • 1 cup chopped fresh pineapple
  • 1/2 cup tamarind paste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup roasted cashews
  • 1 tablespoon coconut oil
  • Salt and pepper to taste
Instructions
  1. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the quinoa is cooked through.
  2. While the quinoa is cooking, heat the coconut oil in a skillet over medium heat. Add the pineapple and tamarind paste and cook for 5 minutes, or until the pineapple is softened.
  3. Stir in the cooked quinoa, cilantro, and cashews. Season with salt and pepper to taste.
  4. Serve warm and enjoy the vibrant flavors of the Mediterranean.
