Zesty Orange and Fennel Orzo with a sprinkle of Toasted Almonds
With its bright citrus flavors and the nutty richness of toasted almonds, this orzo salad is a lively and refreshing side dish. It's quick to make, so it's perfect for a weeknight meal. The orzo is cooked in a flavorful broth made with orange juice, fennel, and onion, and then tossed with toasted almonds and fresh parsley. The result is a dish that's both satisfying and healthy.
The inspiration for this recipe came to me on a trip to Italy. I was visiting a friend who lives in a small town in Tuscany. One evening, she invited me to dinner and served me a simple pasta dish made with orzo, fennel, and orange juice. I was immediately hooked on the combination of flavors. When I got back home, I started experimenting with different variations of the dish. I added toasted almonds for some extra crunch, and I also used a bit of white wine in the broth. The result is this recipe, which I think is even better than the original. It's a versatile dish that can be served as a side dish or a main course. It's also perfect for a potluck or picnic.
