Ingredients
  • 1 cup lentils
  • 2 cups vegetable broth
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup crumbled halloumi cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon za'atar seasoning
Instructions
  1. Rinse the lentils and sort through them to remove any debris.
  2. In a medium saucepan, combine the lentils, vegetable broth, onion, bell peppers, and salt and pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the lentils are tender.
  3. While the lentils are cooking, roast the halloumi cheese. Preheat a grill or grill pan over medium heat. Cut the halloumi into 1-inch cubes and grill for 2-3 minutes per side, or until golden brown.
  4. Once the lentils are cooked, stir in the halloumi cheese, parsley, and za'atar seasoning.
  5. Serve the pilaf warm, topped with additional za'atar seasoning and a drizzle of olive oil, if desired.
