Ingredients
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/2 cup chopped fresh figs
  • 1/2 cup sliced almonds
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Rinse the rice in a fine-mesh sieve until the water runs clear.
  2. In a medium saucepan, combine the rice, vegetable broth, figs, almonds, cardamom, salt, and pepper.
  3. Bring to a boil over high heat.
  4. Reduce heat to low, cover, and simmer for 18 minutes, or until the rice is tender and the liquid has been absorbed.
  5. Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork.
  6. Serve warm.
