Couscous is a staple food in many North African and Middle Eastern cuisines. It's made from semolina flour and is traditionally cooked by steaming it over a pot of boiling water. In this recipe, we're going to roast the vegetables first, which gives them a bit of caramelization and adds a lot of flavor to the dish. We're also going to add some pomegranate seeds for a pop of color and tartness. The result is a dish that's both hearty and refreshing.
