Ingredients
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the quinoa, vegetable broth, and olive oil.
  3. Spread the vegetables on a baking sheet and roast for 20 minutes, or until tender.
  4. While the vegetables are roasting, cook the quinoa according to the package directions.
