Ingredients
1 cup quinoa, rinsed
2 cups vegetable broth
1 tablespoon olive oil
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 zucchini, chopped
1 cup cherry tomatoes
1/4 cup balsamic vinegar
1 tablespoon honey
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, combine the quinoa, vegetable broth, and olive oil.
Spread the vegetables on a baking sheet and roast for 20 minutes, or until tender.
While the vegetables are roasting, cook the quinoa according to the package directions.
In a small bowl, whisk together the balsamic vinegar, honey, salt, and pepper.
Once the quinoa and vegetables are cooked, combine them in a large bowl.
Drizzle the balsamic glaze over the quinoa and vegetables and toss to coat.
