Umami Miso and Ginger Linguine
This simple yet flavor-packed pasta dish combines the richness of miso paste with the freshness of ginger and garlic. The addition of tamari and nutritional yeast provides a boost of umami, while the linguine cooks to a perfect al dente texture.

Ingredients
  • 12 ounces linguine pasta
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons white miso paste
  • ¼ cup tamari or soy sauce
  • ¼ cup nutritional yeast
  • ¼ cup chopped fresh parsley
Instructions
  1. Cook the linguine according to package directions.
  2. Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium-low heat.
  3. Add the garlic and ginger and cook until fragrant, about 1 minute.
  4. Stir in the miso paste, tamari, and nutritional yeast.
  5. Slowly add 1/2 cup of the pasta cooking water and stir until a smooth sauce forms.
  6. Drain the linguine and add it to the skillet.
  7. Toss to coat and cook for 1-2 minutes, or until the sauce has thickened.
  8. Stir in the remaining 2 tablespoons of olive oil and the parsley.
