Ingredients
12 ounces linguine pasta
3 tablespoons olive oil, divided
3 cloves garlic, minced
1 tablespoon grated fresh ginger
2 tablespoons white miso paste
¼ cup tamari or soy sauce
¼ cup nutritional yeast
¼ cup chopped fresh parsley
Instructions
Cook the linguine according to package directions.
Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium-low heat.
Add the garlic and ginger and cook until fragrant, about 1 minute.
Stir in the miso paste, tamari, and nutritional yeast.
Slowly add 1/2 cup of the pasta cooking water and stir until a smooth sauce forms.
Drain the linguine and add it to the skillet.
Toss to coat and cook for 1-2 minutes, or until the sauce has thickened.
Stir in the remaining 2 tablespoons of olive oil and the parsley.
