This umami-packed linguine is a quick and easy weeknight meal that's sure to please everyone at the table. The combination of miso, shiitake mushrooms, and garlic creates a rich and flavorful sauce that clings to the linguine perfectly. A sprinkling of sesame oil and scallions adds the finishing touch to this delicious dish.
This recipe was inspired by a dish I had at a Japanese restaurant a few years ago. I was so impressed by the combination of flavors that I knew I had to recreate it at home. After a few tries, I finally perfected this recipe, and I'm so excited to share it with you. I hope you enjoy it as much as I do!
Prep time: 10 | Cook time: 15 | Serves: 4
Ingredients
16 oz linguine
6 shiitake mushrooms, thinly sliced
2 cloves garlic, minced
1/2 cup white miso paste
1/4 cup vegetable broth
2 tablespoons soy sauce
1 teaspoon sesame oil
2 scallions, thinly sliced
Instructions
Cook the linguine according to the package directions.
While the linguine is cooking, heat a large skillet over medium heat.
Add the shiitake mushrooms and cook until softened, about 5 minutes.
Add the garlic and cook until fragrant, about 1 minute.
Stir in the miso paste, vegetable broth, and soy sauce.
Bring the sauce to a simmer and cook for 5 minutes, or until thickened.
Toss the cooked linguine with the sauce.
Garnish with sesame oil and scallions.
Why It Works
The miso paste adds a deep, savory flavor to the sauce.
The shiitake mushrooms provide a meaty texture and umami flavor.
The garlic adds a bit of pungency and depth of flavor.
The vegetable broth helps to thin out the sauce and make it more manageable.
The soy sauce adds a touch of saltiness and umami flavor.
