Ingredients
  • 1 package (1 pound) frozen spinach, thawed and squeezed dry
  • 1/2 cup chopped fresh thyme leaves
  • 1/2 cup chopped fresh parsley leaves
  • 1/2 cup chopped green onions
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 package (1 pound) phyllo dough, thawed
  • 1/4 cup melted butter
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the spinach, thyme, parsley, green onions, feta cheese, Parmesan cheese, and olive oil. Season with salt and pepper to taste.
  3. Lay a sheet of phyllo dough on a lightly floured surface. Brush with melted butter.
  4. Place 1/4 cup of the spinach mixture in the center of the phyllo dough.
  5. Fold the two long sides of the phyllo dough over the filling, then fold the two short sides over the filling to form a rectangle.
  6. Place the borek on a baking sheet and repeat with the remaining phyllo dough and filling.
  7. Bake for 20-25 minutes, or until golden brown.
  8. While the borek is baking, make the lemon-garlic dip. In a small bowl, combine the yogurt, lemon juice, garlic, and olive oil. Season with salt and pepper to taste.
