Ingredients
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chopped spinach
  • 1 teaspoon dried thyme
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 sheet phyllo dough
  • 1/4 cup melted butter
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and garlic to the skillet and cook until softened.
  4. Add spinach and thyme to the skillet and cook until the spinach is wilted.
  5. Remove the skillet from the heat and stir in the feta cheese and Parmesan cheese.
  6. Lay out the phyllo dough on a lightly floured surface.
  7. Brush the phyllo dough with melted butter.
  8. Spread the spinach mixture evenly over the phyllo dough.
  9. Roll up the phyllo dough tightly and cut into 1-inch pieces.
  10. Place the rolls on a baking sheet and bake for 15-20 minutes, or until golden brown.
