Ingredients
  • 1 cup whole wheat flour, plus more for dusting

  • 1/2 teaspoon salt
  • 1/2 cup plain plant-based yogurt
  • 1/4 cup olive oil, divided
  • 1 zucchini, sliced into 1/4-inch thick rounds
  • 1 red bell pepper, sliced into 1/2-inch strips
  • 1/2 cup red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup pitted Kalamata olives, sliced
Instructions
  1. Preheat oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Stir in the yogurt and 2 tablespoons of olive oil until a dough forms.
  4. Knead the dough on a lightly floured surface for 5-7 minutes until it becomes smooth and elastic.
  5. Roll out the dough into a 12-inch circle and place it on a baking sheet lightly greased with olive oil.
  6. Brush the dough with the remaining olive oil.
  7. In a grill pan or on a grill, char the zucchini, bell pepper, and onion until slightly tender and grill marks appear.
