Ingredients
  • 1 package (12 sheets) of filo dough, thawed
  • 1 cup fresh spinach, coarsely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/2 lemon, zested and juiced
  • 2 cloves garlic, minced
Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the spinach, feta cheese, parsley, mint, olive oil, lemon zest, lemon juice, and garlic.
  3. Lay a sheet of filo dough on a lightly floured surface and brush with olive oil.
  4. Place about 1/4 cup of the filling in the center of the sheet.
  5. Fold the bottom corner of the filo dough over the filling, then fold the sides inward.
  6. Roll up the dough tightly from the bottom and place it on a baking sheet lined with parchment paper.
  7. Repeat with the remaining filo dough and filling.
  8. Bake for 15-20 minutes, or until golden brown and crispy.
