Ingredients
1 cup dried chickpeas, soaked overnight
1/2 cup chopped onion
1/4 cup chopped parsley
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 cup bread crumbs
1/4 cup tahini
2 tablespoons lemon juice
1 tablespoon water
Instructions
Preheat oven to 400°F (200°C).
Drain and rinse the chickpeas, then pat them dry.
Combine the chickpeas, onion, parsley, garlic, cumin, coriander, and bread crumbs in a food processor and pulse until finely chopped but not pureed.
Form the mixture into 1-inch balls.
Place the falafel bites on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
While the falafel bites are baking, whisk together the tahini, lemon juice, and water in a small bowl.
Serve the falafel bites with the tahini sauce.
