Lemon-Marinated Feta Salad with Olives and Cucumber

This salad was inspired by a trip I took to Greece a few years ago. I was eating at a taverna on the island of Mykonos when I was served a salad that was very similar to this one. The salad was so delicious that I asked the chef for the recipe. He was happy to oblige, and I've been making this salad ever since.

Ingredients
  • 1 block (8 ounces) feta cheese, crumbled
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1 cucumber, sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. In a medium bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  2. Add the feta cheese to the bowl and toss to coat.
  3. Cover the bowl and refrigerate for at least 2 hours, or overnight.
  4. When ready to serve, add the cucumber, olives, and red onion to the bowl and toss to combine.
  5. Serve immediately.
