Shaved Asparagus and Pea Salad with Lemon-Olive Oil Dressing
This shaved asparagus and pea salad is a light and refreshing dish that is perfect for spring or summer. The asparagus is shaved into thin ribbons, which makes it tender and easy to eat. The peas add a touch of sweetness, while the red onion and mint provide a bit of acidity and freshness. The lemon-olive oil dressing is simple but flavorful, and it ties all of the ingredients together perfectly.
This recipe was inspired by a salad that I had at a restaurant in the south of France. I was immediately struck by the combination of shaved asparagus and peas, and I knew that I had to recreate it at home. I experimented with different dressings and ingredients, and I finally came up with this recipe that I think is even better than the original. I love how the shaved asparagus and peas are so tender and easy to eat, and the lemon-olive oil dressing is the perfect complement to the flavors of the vegetables. This salad is a great way to use up fresh spring produce, and it is sure to be a hit at your next gathering.
