Fig, Pomegranate, and Halloumi Salad

Ingredients
  • 12 fresh ripe figs, halved
  • One pomegranate
  • 8 oz sliced halloumi, grilled
  • 5 oz fresh arugula
  • 5 oz fresh spinach
  • 1/3 cup pine nuts
  • 1/3 cup chopped parsley
  • 1/4 cup chopped basil
Instructions
  1. Cut the figs lengthwise. Toss in a large bowl with the pomegranate seeds, pine nuts, parsley, and basil.
  2. Grill or pan fry halloumi slices until golden brown and warmed through.
  3. Add grilled halloumi to the bowl. Toss to coat.
  4. Season to taste and serve over arugula and spinach salad.
  5. Drizzle with any remaining pomegranate juice and oil.
