Ingredients
  • 1 package (1 pound) frozen spinach, thawed and squeezed dry
  • 1 cup vegan feta cheese

  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Add spinach, feta, dill, parsley, and mint to the skillet. Cook until spinach is wilted, about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Transfer the spinach mixture to a 9x13-inch baking dish.
  7. Top with filo pastry sheets, overlapping them slightly.
  8. Bake for 25-30 minutes, or until the filo pastry is golden brown.
