Sweet Potato and Black Bean Collard Wraps

Ingredients
  • 1 large sweet potato, peeled and diced
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup chopped collard greens
  • 1/4 cup chopped onion
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potatoes with olive oil, chili powder, paprika, and salt.
  3. Spread sweet potatoes on a baking sheet and roast for 20 minutes, or until tender.
  4. While the sweet potatoes are roasting, heat the olive oil in a large skillet over medium heat.
  5. Add the onion and collard greens to the skillet and cook until softened, about 5 minutes.
  6. Add the black beans to the skillet and cook until heated through, about 2 minutes.
  7. Remove the skillet from the heat and stir in the roasted sweet potatoes.
  8. Serve the wrap filling in collard greens leaves.
