Ingredients
  • 1 bunch mustard greens, washed and chopped
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup vegetable broth
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with olive oil, salt and pepper. Spread on a baking sheet and roast in preheated oven for 20-25 minutes, or until tender and slightly browned.
  3. While the sweet potatoes are roasting, heat olive oil in a large skillet over medium heat.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Add mustard greens to the skillet and cook, stirring occasionally, until wilted, about 10 minutes.
  6. Add vegetable broth to the skillet and bring to a simmer.
  7. Reduce heat to low, cover and simmer for 15-20 minutes, or until the mustard greens are tender.
  8. Serve roasted sweet potatoes with sautéed mustard greens.
