Ingredients
  • 1 lb russet potatoes, peeled and quartered
  • 1/4 cup plant-based milk
  • 2 tbsp vegan butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped mushrooms
  • 1/4 cup vegan sour cream
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Boil potatoes until tender; drain and mash.
  3. Mash in plant-based milk, butter, salt, and pepper.
  4. Combine onion, bell pepper, and mushrooms in a pan; sauté until softened.
  5. Form mashed potato mixture into balls and flatten into circles.
  6. Spoon sautéed vegetables onto one half of each circle.
  7. Fold over the other half and seal edges.
  8. Bake for 20-25 minutes, or until golden brown.
