Creamy White Bean and Kale Gumbo
This vegan gumbo is comfort food at its best. The creamy white beans and hearty kale make it a satisfying and nutritious meal.

Ingredients
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped celery
- 2 cloves garlic, minced
- 1 (15 ounce) can black-eyed peas, rinsed and drained
- 1 (15 ounce) can diced tomatoes
- 1 (14.5 ounce) can vegetable broth
- 1 cup chopped kale
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, green bell pepper, celery and garlic and cook until softened, about 5 minutes.
- Stir in the black-eyed peas, tomatoes, vegetable broth and kale.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until the kale is tender.
- Serve hot.
