In the depths of winter, when the only fresh greens available are the hearty collard greens, I find myself craving something a little more exciting than the usual steamed or sautéed greens. These Vegan Collard Green Waffles were born out of that craving. They're a delicious and nutritious way to get your greens, and they're also a great way to use up leftover collard greens.

Ingredients
- 1 cup whole wheat flour
- 1 cup cornmeal
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsweetened almond milk
- 1/4 cup olive oil
- 1 egg
- 1 cup chopped collard greens
Instructions
- Preheat your waffle iron.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
