In the depths of winter, when the only fresh greens available are the hearty collard greens, I find myself craving something a little more exciting than the usual steamed or sautéed greens. These Vegan Collard Green Waffles were born out of that craving. They're a delicious and nutritious way to get your greens, and they're also a great way to use up leftover collard greens.

Ingredients
  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk
  • 1/4 cup olive oil
  • 1 egg
  • 1 cup chopped collard greens
Instructions
  1. Preheat your waffle iron.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the almond milk, olive oil, and egg.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the collard greens.
  6. Pour 1/4 cup of batter onto the preheated waffle iron and cook according to the manufacturer's instructions.
