Ingredients
  • 1 pound collard greens or other leafy greens
  • 1 vegan smoked sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/4 cup apple cider vinegar
  • 1 tablespoon vegan Worcestershire sauce
  • Salt and pepper to taste
Instructions
  1. Rinse greens thoroughly and remove stems. Chop coarsely.
  2. Slice vegan sausage into bite-sized pieces.
  3. Heat a large skillet over medium heat and add a drizzle of olive oil.
  4. Add onion and garlic to the skillet and cook until softened about 5 minutes.
  5. Add greens, vegetable broth, vinegar, and Worcestershire sauce to the skillet. Season with salt and pepper and stir to combine.
  6. Bring to a simmer, cover, and cook for 20-25 minutes, or until greens are tender.
  7. Add vegan sausage to the skillet and cook through, about 5 minutes more.
  8. Serve warm.
