Ingredients
  • 1 can (14 ounces) ackee
  • 1 cup saltfish, flaked
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, minced
  • 1 tablespoon tomato paste
  • 1 cup vegetable broth
  • 2 ripe plantains, sliced
Instructions
  1. In a large skillet, heat a drizzle of olive oil over medium-high.
  2. Add the onion, bell pepper, and scotch bonnet pepper and cook until softened, about 5 minutes.
  3. Stir in the tomato paste and cook for 1 minute more.
  4. Add the ackee, saltfish, and vegetable broth to the skillet and bring to a simmer.
  5. Reduce heat to low, cover, and simmer for 15 minutes, or until the ackee is tender.
  6. While the ackee is simmering, heat a drizzle of olive oil in a large skillet over medium-high.
  7. Fry the plantains in batches until golden brown and crispy, about 2 minutes per side.
