Ingredients
1 head of cauliflower, cut into florets
1 tablespoon olive oil
1 head of garlic, cloves separated and peeled

1/4 cup nutritional yeast

1/2 teaspoon black pepper

Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss cauliflower florets with olive oil and spread on a baking sheet.
Roast for 20-25 minutes, or until tender and slightly browned.
Meanwhile, toss garlic cloves with olive oil and spread on a separate baking sheet.
Roast until golden brown and fragrant, about 15 minutes.
In a large bowl, mash the roasted cauliflower until smooth.
Add roasted garlic, almond milk, nutritional yeast, salt, and pepper.
Mash until well combined.
