Ingredients

Instructions
  1. Wash and chop the collard greens.
  2. Finely dice the onion and garlic.
  3. In a large pot, sauté the onion and garlic in olive oil until softened.
  4. Add the collard greens, apples, cranberries, maple syrup, vegetable broth, and apple cider vinegar to the pot.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, or until the greens are tender.
  6. Season to taste with additional maple syrup or apple cider vinegar if desired.
