Ingredients
  • 1 block extra-firm tofu, drained and crumbled
  • 1 cup chopped bell pepper
  • 1 cup chopped onion
  • 1 cup chopped mushrooms
  • 1/2 cup chopped spinach
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon turmeric
  • Salt and pepper to taste
Instructions
  1. Heat a large skillet over medium heat.
  2. Crumble the tofu into the skillet and cook until browned, about 5 minutes.
  3. Add the bell pepper, onion, mushrooms, and spinach to the skillet and cook until softened, about 5 minutes.
  4. Stir in the nutritional yeast, turmeric, salt, and pepper.
  5. Cook for 1 minute more, or until heated through.
  6. Serve immediately.
