Ingredients
2 whole wheat tortillas
1 (15 ounce) can black beans, rinsed and drained
1 medium sweet potato, peeled and diced
1/2 onion, chopped
1/2 red bell pepper, chopped
1/2 avocado, sliced
salsa, for serving
hot sauce, for serving
Instructions
1. Heat a large skillet over medium heat. Add the sweet potato and cook until browned on all sides, about 5 minutes. Add the onion and bell pepper and cook until softened, about 5 more minutes.
2. Add the beans to the skillet and cook until heated through, about 2 minutes. Season with salt and pepper, to taste.
3. To assemble the burritos, place one tortilla on a plate and spread some of the bean mixture down the center.
4. Top with some of the sweet potato mixture, avocado, and salsa. Repeat with the remaining tortilla and ingredients.
5. Serve with hot sauce, if desired.
