Ingredients
  • 1 cup whole wheat pastry flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsweetened plant-based milk
  • 1/4 cup vegan butter, melted
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat a waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, whisk together the plant-based milk, melted vegan butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and whisk until just combined.
  5. Pour 1/4 cup of batter onto the preheated waffle iron and cook according to the manufacturer's instructions.
  6. Serve the waffles with blueberry compote.
  7. To make the blueberry compote, combine 1 cup of blueberries, 1/4 cup of sugar, and 1 tablespoon of water in a small saucepan.
  8. Bring to a simmer over medium heat and cook for 5 minutes, or until the blueberries have softened and the compote has thickened.
