Plant-Based Breakfast Quesadillas
These tofu-based breakfast quesadillas are a quick and easy way to start your day with a protein-packed meal. Ingredients
  • 14-ounce package extra firm tofu, drained and crumbled
  • ¼ cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Pinch of turmeric
  • ¼ cup chopped bell pepper
  • ¼ cup chopped onion
  • 1 small tomato, chopped
  • 8 corn tortillas
Instructions
  1. In a large bowl, combine the tofu, nutritional yeast, garlic powder, onion powder, and turmeric. Mix well.
  2. Heat a skillet over medium heat. Add the tofu mixture and cook, stirring occasionally, until heated through.
  3. Add the bell pepper, onion, and tomato to the skillet. Sauté until softened.
  4. Warm the tortillas in the microwave or on a skillet.
  5. Place 2 tablespoons of the tofu scramble onto half of a tortilla.
  6. Top with the sautéed veggies and a drizzle of vegan cheese sauce (recipe below).
  7. Fold the tortilla in half.
  8. Heat a skillet over medium heat. Add the quesadilla and cook until golden brown on both sides.
